Banana Bread

Adapted from Margaret Fulton's Encyclopedia of Food and Cookery. 

Ingredients:
3 ripe bananas well mashed
2 eggs well beaten
2 cups self raising flour
3/4 cup sugar
1 teaspoon salt
1 teaspoon baking powder

Method:
1. Preheat the oven to 180°C 
2. Mix bananas and eggs in a bowl
3. Sift in flour, sugar, salt and baking powder
4. Mix well
5. Put into a loaf tin and bake for 1 hour. Remove from pan to a wire rack
6. Serve either warm or cool
