Isobel's Beetroot Salad

Ingredients
  • Dark green mixed salad leaves – like rocket, spinach
  • Tinned baby beets (chopped in half)
  • Lebanese cucumber, chopped into small pieces
  • Haloumi cheese, sliced and toasted (I just fry them on the stove in a non-stick frypan, bbq works too)
Dressing:
  • Olive oil
  • Caramelised balsamic vinegar or balsamic vinegar
  • a bit of honey
Calories: 196 serving 4 people
