- Dark green mixed salad leaves – like rocket, spinach
- Tinned baby beets (chopped in half)
- Lebanese cucumber, chopped into small pieces
- Haloumi cheese, sliced and toasted (I just fry them on the stove in a non-stick frypan, bbq works too)
- Olive oil
- Caramelised balsamic vinegar or balsamic vinegar
- a bit of honey
